Tortilla soup: tomato-based soup, served with thinly-sliced tortilla chips, avocado, cheese, sour cream and chile pasilla (can be dairy free)

Chile relleno with almond sauce: dried ancho chile stuffed with cheese and served with almond sauce

Chicken with molé: chicken breast topped with our traditional handmade molé sauce, made from a selection of dry peppers, almond and pumpkin seeds, spices and chocolate, served with sautéed vegetables and white rice (can be vegetarian, replacing chicken with tofu)

Cochinita pibil: a traditional Mayan dish from the Yucatan, slow cooked in our pibil (underground oven) made with pork simmered in orange juice, aromatic spices and achiote seed, served with a jicama salad, gallo pinto (rice and black beans) and fried plantain
